RATATOUILLE

La ratatouille è un piatto tipico della Francia, costituito da un insieme di verdure di stagione tagliate a tocchetti e fatte stufare lentamente, con olio d'oliva ed erbe aromatiche. Si serve come contorno caldo. A fare onore a questa semplice ricetta e alle stupende verdure di stagione, ha contribuito lo stupendo Remy che nel film  "Ratatouille" fa sciogliere anche il più rigido critico gastronomico Ego riportandogli alla memoria gli antichi sapori della sua infanzia, tipici di questo semplice piatto in cui verdure e spezie creano un mix davvero unico! Grazie a piccolo Remy molti cuochi e provetti pasticcioni come me hanno provato a ricrearlo in chiave moderna copiando la sua idea. Mi sono innamorata di questo film stupendo, non mi stanco mai di riguardarlo; e mi sono innamorata anche di questo piatto... Delicato e deciso allo stesso tempo. Poi la cottura dolce dolce fatta al forno rende queste verdure davvero squisite! 



INGREDIENTI (per 4 persone)

1/2 cipolla bianca o gialla
300 gr di passata di pomodoro
q.b. olio EVO
2 zucchine fresche
2 melanzane lunghe e strette
3 peperoni gialli o rossi
q.b. sale fino
qualche rametto di timo fresco


PROCEDIMENTO

Preriscaldare il forno a 180°. Iniziare preparando la salsa di pomodoro per la base della nostra ratatouille. Tritare la cipolla e metterla in un tegame a soffriggere con dell'olio EVO (1), aggiungere la passata di pomodoro (2), salare a piacere e fare cuocere per venti minuti circa, finchè la passata si sarà asciugata leggermente.


Preparare le verdure, lavarle e pulirle, lasciandole intere il più possibile (3). Affettare le melanzane ad uno spessore di 3 millimetri circa (4). Lasciare i peperoni interi, togliere i semi e i filamenti interni e affettare anche questi ad uno spessore di 3 millimetri circa (5). Fare la stessa cosa anche con le zucchine e affettarle ad uno spessore di 3 millimetri circa (6).


Preparare una pirofila che vada bene per le cotture in forno, versare il sugo di pomodoro sul fondo in maniera omogenea (7) e iniziare a disporre le verdure. Posizionare le verdure in maniera alternata nella pirofila con lo stesso schema ripetuto: melanzana-zucchina-peperone (8). Continuare in questa maniera fino ad esaurire tutte le verdure, aggiungere un pizzico di sale in superficie, i ciuffi di timo e un filo di olio EVO (9).


Coprire le verdure con un foglio di carta forno a misura (10) e infornare in forno preriscaldato a 180° per 30 minuti (11).


Trascorso il tempo togliere la ratatouille dal forno e servire in tavola...

English Version


INGREDIENTS (for 4 people)
1/2 white or yellow onion
300 grams of tomato sauce
q.b. EVO oil
2 fresh zucchini
2 eggplants, long and narrow
3 red or yellow peppers
q.b. salt
a few sprigs of fresh thyme

PROCEDURE
Preheat oven to 180 °. Begin preparing the tomato sauce for the base of our ratatouille. Chop the onion and fry in a pan with oil EVO (1), add the tomato sauce (2), salt to taste and cook for about twenty minutes, until the sauce is slightly dry.
Prepare the vegetables, wash and clean them, leaving them whole as much as possible (3). Slice the eggplant to a thickness of approximately 3 mm (4). Let the whole peppers, remove the seeds and inner strands and slice these to a thickness of about 3 mm (5). Do the same thing with the zucchini and slice to a thickness of about 3 mm (6).
Prepare a baking dish that goes well for cooking in the oven, pour the tomato sauce on the bottom evenly (7) and start to arrange the vegetables. Place the vegetables alternately into the pan with the same pattern repeated: eggplant-zucchini-pepper (8). Continue in this way until you finish all the vegetables, add a pinch of salt on the surface, the tufts of thyme and a drizzle of olive oil EVO (9).
Cover the vegetables with a sheet of parchment paper to size and bake in preheated oven at 180 degrees for 30 minutes.
After the time remove the ratatouille from the oven and serve ...
