Eat Parade 2012: Philadeplhia Cheesecake con pesche bianche e gocce di cioccolato

INGREDIENTI per il FONDO

250 gr di biscotti secchi
150 gr di burro fuso

INGREDIENTI per la crema

100 ml di panna fresca

500 gr di philadelphia classico

100 gr di zucchero

1/2 limone (il succo)

1 bustina di vanillina
10 gr di gelatina in fogli
2/3 cucchiai di latte

INGREDIENTI per la Gelè alla frutta

250 gr di frutta (nel mio caso pesche bianche)
100 gr di zucchero
5 gr di gelatina in fogli (1 foglio)


PROCEDIMENTO

Iniziate col preparare tutti gli ingredienti che vi occorrono (1). Sbriciolate i biscotti (io li polverizzo in un mixer) e uniteli al burro fuso (io l'ho fuso nel microonde); mescolate poi fino ad ottenere un composto omogeneo.
Rivestite una tortiera a cerchio apribile del diametro di 20/22/24 cm (non più piccolo e non più grande!) con la carta forno (2).


Versate il composto di biscotti e burro nella tortiera e con il dorso di un cucchiaio (io uso il batticarne che funziona meglio) schiacciatelo per bene e livellatelo (3). Riponete in frigo per una mezz'oretta, intanto che preparate la crema al philadelphia.



Mettete ad ammorbidire i fogli di gelatina in acqua fredda.
Intanto versate in una insalatiera (che avrete riposto a freddare in congelatore una decina di minuti) la panna che monterete con  lo zucchero, aiutandovi con le fruste elettriche (4).
In un altro contenitore versate il philadelphia assieme alla vanillina e al succo di 1/2 limone e mescolate sempre con le fruste elettriche in modo da ottenere una crema soffice. Aggiungete la panna montata e mescolate ancora con le fruste.
Versate il latte in una scodellina e scaldatelo qualche secondo nel microonde. Strizzate bene i fogli di gelatina e fateli sciogliere nel latte caldo mescolando molto bene senza lasciare grumi.
Aggiungete il latte con la gelatina al composto di philadelphia e mescolate molto bene (io faccio sempre con le fruste) (5).




Aggiungete una manciata abbondante di gocce di cioccolato alla crema e mescolate.
Togliete dal frigorifero la tortiera con la base di biscotti e versatevi la crema di philadelphia, livellate e riponete in frigorifero a far rassodare per almeno 4/5 ore (6).




Quando sarà quasi trascorso il tempo di rassodamento potrete preparare la gelè che andrà a ricoprire ed addolcire la cheesecake. Mettete in un pentolino la frutta tagliata a pezzettini piccolini assieme allo zucchero e mettete su fuoco dolce (7).
Fate cuocere fino a che lo zucchero sarà sciolto e la frutta si sarà spappolata (8). Intanto mettete ad ammorbidire i fogli di gelatina in acqua fredda.
Quando la frutta sarà cotta a sufficienza strizzate la gelatina e aggiungetela alla salsa di frutta e zucchero : mescolate bene fino a far sciogliere completamente la gelatina.
Togliete la cheesecake dal frigo e versatevi sopra la gelè di frutta (9). Potete lasciarla al centro oppure stenderla sopra tutta la superficie della cheesecake.




Riponete in frigorifero una mezzoretta e la cheesecake con la gelè di frutta sarà pronta (10).




Se la cheesecake sarà consumata tutta nel breve potete decorarla con della frutta fresca a fettine o a cubetti nella parte centrale sopra la gelè.

Portate in tavola e BUON APPETITO!!



English Version
(PHILADELPHIA) CHEESECAKE with white peaches and chocolate chips


INGREDIENTS for the FUND
250 grams of biscuits
150 g butter, melted
Ingredients for the cream

100 ml of fresh cream

500 g philadelphia classic

100 grams of sugar

1/2 lemon (juice)
1 teaspoon of vanilla
10 g gelatin sheets
2/3 tablespoons milk
INGREDIENTS for Gele fruit
250 grams of fruit (in my case white peaches)
100 grams of sugar
5 g gelatin sheets (1 sheet)

PROCEDURE
Start by preparing all the ingredients you need (1). Crumble the biscuits (I pulverize them in a blender) and add to the melted butter (I have melted in the microwave), then stir until the mixture is smooth.
Line a cake mold with a diameter of 20/22/24 cm (not smaller and not bigger!) with the greaseproof paper (2).

Pour the mixture into the pan of biscuits and butter and with the back of a spoon (I use a meat mallet, it works best) crush it well and level up (3). Store in the fridge for half an hour, while I prepare the cream philadelphia.
Put to soften the gelatin in cold water.
Meanwhile, pour into a bowl (which you put in the freezer to cool for ten minutes) that you mount the milk cream with the sugar, with the aid of electric whips. (4)
In another container pour the philadelphia together with the vanilla extract and the juice of 1/2 lemon and mix again with the electric whisk to obtain a soft cream. Add the whipped milk cream and stir with the whisk.
Pour the milk into a bowl and heat it in the microwave a few seconds. Squeeze the sheets of gelee and melt them in hot milk, stirring very well without leaving lumps.
Add the milk with the gelatin mixture to philadelphia and stir very well (I always do with whips) (5).
Add a generous handful of chocolate chips to the cream and stir. 
Remove from the refrigerator the pan with the biscuit base and pour the cream of philadelphia, leveled and refrigerate to harden for at least 4/5 hours (6).
When it is almost spent firming time you can prepare the gelè that will cover and soften the cheesecake. Put the fruit in a saucepan chopped little ones with the sugar and place on low heat. (7)
Cook until the sugar has dissolved and the fruit will be mushy (8). Meanwhile, put to soak the gelatine leaves in cold water.
When the fruit is cooked enough to squeeze the gelatine and add to the sauce, fruit and sugar mix well until the gelatin dissolves completely.
Remove the cheesecake from the refrigerator and pour the gelè fruit (9). You can leave it at the center or spread it over the entire surface of the cheesecake.
Store in the fridge half an hour and the cheesecake with fruit will be ready gelè (10).
If the whole cheesecake will be consumed in short you can decorate it with the fresh fruit into slices or cubes in the middle above the gelè.
Brought to the table and ENJOY!

  2. Ciao Paola scusa se rispondo solo ora; le mandorline sono dei biscottini friabilissimi ma molto buoni.Personalmente li ho fotografati mettendoli infilzati sopra del gelato al cioccolato.
    Spero di essere stata più chiara.
    P.S. che meraviglia il tuo cheesecake!!!!!!Complimenti mia cara.
